Place the chafing dish on the tray, on the table before the host or hostess, as the occa sion may demand. At serving time put all the necessary materials that must be meas ured with a spoon on the right-hand side, also the butter, with an oyster fork or butter pick. The milk, cream, stock or water should be measured and put into little pitchers on the left. On the tray place a teaspoon and tablespoon for measuring, a long chafing dish spoon for the cooking, and a silver serving spoon. Perfect arrangement saves much time and confusion, and makes chafing dish cooking a pleasure.
