However, most of the commercially important varieties are of two species: Prunus domestica or European plums, and Prunus salicina or Japanese plums.Plums grown in California primarily for the fresh market are different from other varieties because they cannot be successfully dried without removing the pit. Only limited quantities are used for processing - mostly canning and freezing. Varieties produced in California for drying are referred to as prunes when in a fresh state as well as dried. A third category of prunes, grown chiefly in the Pacific Northwest and Michigan, consists of varieties suited for use in fresh, canned, or dried form.
