Excerpt from Production Labor Requirements in Southern Rice MillsIn 1963, 74 mills were Operating mainly in 3 major southern States (louisiana, Texas, and Arkansas) and in California. 1/ These mills processed approximately million cwt. Of rough rice from the 1963 crop. 2/ The mills vary in size, capacity, equipment used, technology, -and Operating practices. The cost Of processing rice in these mills also varies.An earlier study by the u.s. Department of Agriculture revealed that in many rice milling plants nearly 45 percent of costs of operation are for employ ees. 3/ Over half Of these costs were paid as salaries and wages to production workers while the remainder went to other salaried employees, including clerical and executive personnel. Among the rice mills studied, labor costs per unit of output were highly variable, indicating a wide range in efficiency and utiliza tion of labor.
